It's CHILI out there

Chef Mick’s Basic Chili


You need:

Ground Beef
Ground Pork
Ground Turkey/Chicken
Garlic—minced
Yellow Onion--diced
Tomato Sauce
Whole Peeled Tomatoes
Red Kidney Beans—can
Cumin/Comino Powder
Chili Powder
Salt and Pepper to taste
Canola Oil


In medium to large pot, depending on how much you make, heat the Canola Oil and Sautee the Three different meats, until brown.

Add Garlic and Onions with a can of Tomato Sauce mixed with water, as your base, and allow the onions to soften. 

Add the Comino, Chili Powder and any other spices you crave.

Add beans and Allow this to stew or cook on the stove top for about 20 minutes.

Serve with Cheese and Corn Bread

Vegetarian Dinner





Here is what you need

MENU

EGGPLANT AND STEWED TOMATO CASSEROLE

Eggplant
Silk
Flour
Can of stewed tomatoes
Bread crumbs
Pepper
Parmesan cheese
Peel 1/2 eggplant and slice thin. Put in deep dish and pour boiling water
over.   Drain, dip in Silk then Flour and then back into the Silk before using the fine bread crumbs.
 Sautee in small amount of oil until brown on both sides. Drain between 2 pieces of paper towels.
Layer eggplant in bottom of casserole. Sprinkle Parmesan cheese on top. Layer stewed tomatoes over and continue with another layer of eggplant.
 Cover and bake at 350 degrees for 25 minutes.

CAULIFLOWER "MASHED"

1 head cauliflower
Silk
Butter substitute
Salt & pepper
Paprika
Cook cauliflower until fork tender. Place cauliflower (in pieces), Silk (milk substitute) , salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in hot oven until bubbly.

Sweetened Green Beans

Fresh Green Beans
Butter substitute
Olive Oil
Sugar
Red Pepper Flakes

Heat olive oil and butter substitue in Sautee pan
Add Green Beans (blanched in hot water) and toss to coat
Sprinkle with Sugar and Red Pepper Flakes

Fried Chicken, Garlic-Jalapeno Potatoes and Onion Rings

Hey there friends,

Yes we are back tomorrow evening, or Prevening as Sheldon would say on The Big Bang Theory....



So here is what you need:
Chicken, fresh or if you want to use frozen chicken breasts make sure they are defrosted.
1 egg and some milk to start our breading process
flour and bread crumbs for the breading
Oil, now we are only starting the frying process and then finishing in the oven, so you wont go through
a whole bottle of oil, but make sure you have at least half a bottle. (not olive oil, but canola or vegetable)
Pan, big enough to hold oil and not start a fire when you put chicken in, in other words a deep pan, we do not want to burn down the kitchen.

SIDES

Golden skin potatos
Jalapenos, fresh not pickeled in a jar
Garlic, fresh is better

Yellow onions
